I think you do need them, unless you have the portable speakers of course. I was a little bit confused too, because I noticed that when I don't have the headphones plugged in it still makes some sound effects. It has never played music though.

The iPod touch doesn't have built in speakers, so no music or videos or YouTube without headphones; unless you just want to watch a video without listening... But I do quite often surf the web without headphones...
