how do you sync all your music at once? i had to drag and drop all my music but with windows it did it all at once, can you do this on itunes?

Ok on the left side of iTunes, you should see something that says for example, "Jeff's iPod". Click this. You should now see a screen breaking down all the info about your Touch. Find the option "Manually manage music". Make sure that is unchecked. Now, find the button where it says "Sync". Click this. It will now put all of your songs onto your Touch. Hope this helps.

I'm having a problem w/ syncing. I'm afraid to sync my ipod to my itunes coz it removes my songs. how can i prevent this? how to sync pics on ipod coz evrytime i sync a pics folder and add pictures it removes to the current folder. what should i do?

You need to select the option called "manually manage music". Then you can drag and drop whatever you want into your iPod.
