Default Lost old notes on iPod Touch when updated to the latest software version on iTunes

OK, so the other day I decided to put the latest software version (3.1 I think) on my first generation iPod touch so I would be able to put some cool new Apps on it. Little did I know it would give me a new notepad and all my old notes would be gone. I think I had around 65 different notes, some of them very long with valuable information. From what I have learned, everytime you sync the iPod to the computer, a backup is made and stored somewhere. However, I had not hooked my iPod to the computer in a while as I have a wall charger for the iPod and dont really have a need to connect it to the computer. Also, I think the settings were to where it does not automatically make a backup when the iPod is synced to the computer. What I'm wondering, does the computer store all your old information somewhere right before it starts downloading the new software to the iPod, and if so how can I retrieve it?

If You do a sync with iTunes, he make first a copy of Your iPod.
So You can do a restore and then iTunes put the latest copie back on your iPod.
But if You didn't sync for a long time all that stuff between is lost, so better is to sync so now and then, but's maybe to late for You.
